Explore the delights of Italian cookery and learn how to prepare authentic dishes, such as Risotto al funghi, gnocchi-panelle al forna, tuna ragu, pizza fritta, and vegetable dishes/accompaniments using traditional ingredients.
The traditional dishes from the northern regions of Italy will be the focus for the first four weeks, moving on to those of the southern regions for the remainder of the course.
The course will include demonstrations, tastings and the opportunity to create the dishes yourself under the guidance of your tutor.
You will be required to bring along your own ingredients, on a weekly basis, as advised by the tutor. Students will also need to bring their own kitchen equipment, such as knives, graters, food containers, tea towels and cutlery.
Entry requirements
This course is aimed at beginners and no prior knowledge or experience is required.
Assessment
This is a recreational course and there is no formal assessment.
