Is this course right for me?

If you are serious about a career in catering, our industry-preferred course will develop your skills and knowledge to an advanced level and prepare you for work in this vibrant and customer-orientated industry. You may have recently achieved your VRQ Level 2 or already be working as a chef and looking to gain a formal qualification. Either way, you will be passionate about catering and hungry for success!

What will I be doing?

Our course will teach you the most important and up-to-date skills and techniques you need for employment or career progression in the catering and hospitality industry.

At our on-site commercial restaurant, Spires, you will learn how to produce biscuits, cakes, sponges, petit fours, and hot and cold desserts. You will also have the opportunity to explore advanced techniques in producing poultry, game, fish, meat and vegetarian dishes with a focus on precision, speed and control.

In addition to your practical training, you will study a number of theory topics including the principles of food safety management and the cultural and culinary art of gastronomy. You will also learn how to supervise, lead and train a team of staff in a professional kitchen.

Entry requirements

You will need a Diploma in Professional Cookery VRQ Level 2 or relevant industry experience. You will be asked to attend an interview where you will have the opportunity to show your passion for the industry and your enthusiasm for the course.

Assessment

You will be assessed on an ongoing basis through written assignments, practical tasks and online multiple-choice tests.

With your VRQ Level 3, you can kick-start your dream career in Catering and Hospitality. Whether you see yourself as a Pastry Chef in a boutique pâtisserie or working for Michelin started chefs such as Gordon Ramsay, our course will set on the right path.
